Oregano grows quite swiftly and can gain a height upto two feet and spread out for 10-inches approximately. This is why you need a pot with a minimum of 12-inches in diameter. This herb needs water only when the soil is dry when you touch. Oregano is either used with other spices while cooking or as a sprinkle on top of dishes.
Mint is a fast grower. All you need to do is get a couple of small mint plants from a nearby nursery or may be borrow from a friend. Plant the saplings in a really wide pot or a garden. Make sure that there is enough space (about 2 feet) between the two saplings. These tiny plants will cover the area with their ever expanding roots. They grow up to be about 1- 1 and a half feet tall.
Thyme is a perennial herb. Once it holds the ground, it is sure to grow for years to come. But growing thyme from seeds is a bit difficult as it germinates real slowly. You can then opt to plant saplings before spring season hits. Keep the plant inside the house for about 2-3 weeks and it’ll grow like a toddler. Thyme is used for both decoration as well as cooking.
Basil seeds should be planted after spring. These seeds need extra care so as to keep them away from heavy rainfall. You can cover the pot, where you have planted the seeds, with a plastic wrap and take it off when the saplings start to show. The plant grows to a height of 2 feet approximately. In India, basil is both holy, medicinal and a good cooking herb.
Sage is a bit bitter in taste. It is grown in mildly sunny environment. You should not get greedy with planting too many saplings as the taste of the herb loses its intensity if planted in large quantities. This herb is also a fast grower.
A traditional fine herb, chervil is easy to grow and easier to harvest. You should plant about 4-5 seeds in a pot keeping a distance of 12 inches between them. Water the seeds regularly and make sure you don’t sow those seeds too deep in the soil. After the saplings have grown in size from 1-2 inches, keep a distance of about 4 inches between them.
Parsley is friendly to cold temperatures. You can therefore plant the seeds almost a month before spring hits. The saplings will start showing only after 3 weeks as this herb is a slow grower. The seeds should be planted about 6-8 inches apart in moist soil. Parsley brings a fresh taste to the dish.
Rosemary is a fragrant plant which works well with all sorts of dishes in the kitchen. It should be planted as tiny sapling. You must cut the leaves from 2/3rd of the below section of the sapling before planting. The plant should be sprayed with water until the roots grow out. Rosemary grows for about 4 feet in height and width.
Bay should be kept away from cold temperatures. Bay grows to be sturdy and large if planted in an open garden. To keep it short and good enough for kitchen use, you can plant it in a pot and keep it indoors. Do provide good quantity of water and manure to the plant. It is an evergreen shrub and will enhance your culinary skills.
Coriander seeds should be split in two before putting them in the soil. Do not use much force to do that. Just rub them gently between your hands. Plant the seeds in moist soil in a pot which is about 8 to 10 inches deep and wide.. Water them nicely. You should keep cutting and using them in the kitchen before they start sprouting seeds.
